Sardines are abundant in the Cornish waters which makes them sustainable and taste great with a tomato sauce. The perfect alternative to pilchards but like mackerel sardine flesh is dense, rich and oily.
Sardines are part of the herring family and the name "Sardine" was first used in English during the early 15th century and it's believed to have originated from the Mediterranean island of Sardinia, around which sardines were once abundant.
